Ingredients
- 1 pineapple
- 1/2 tsp slt
- 2 kg sugar
- 2 1/2 cups water
Steps
Peel and chunk pineapple (~500 g)
Boil water with salt.
Blanch pineapple in 2 batches, 50 seconds each. Then cool each batch in ice water.
Day 1: Make Syrup - Boil water and 1 kg sugar. Remove from heat. Add pineapple. Cover, first with parchment paper and second with lid and let stand 24 hours.
Day 2: Remove pineapple. Add 1/2 c sugar. Boil. Remove from heat. Add pineapple. Cover.
Continue to repeat on days 3, 4, 5, 6, 8, 10
Day 14: Remove pineapple. Dry on baking tray with parchment paper at 50C fan oven for 1-2 hours. Should feel dry, not sticky.
