Ingredients
- Olive Oil
- 1 - 1 1/4 lb stew meat, cut into bite-sized pieces
- Salt
- 1 medium onion
- 2 Tbs yellow curry powder
- 14.5 oz can diced tomatoes
- 3/4 cup water, divided
- 2 cups frozen peas
- 1/2 hot pepper
- 1 lb potatoe, cut into 3/4" cubes
- Cooked rice, for serving
Steps
1) Sear beef 2 min on high heat, without stirring. Reduce heat to medium and cook 8 min, stirring occasionally until juices evaporated and meat is browned. As it cooks, add salt to taste (1/2 tsp). Remove meat
2) Reduce heat to medium-low, and add 2 tsp oil. Saute onions and 1/4 tsp salt for 5 min.
3) Add curry powder and cook 30 sec. Add tomatoes, 1/2 cup water, and meat. Season to taste. Simmer 45 - 90 min until meat is tender.
4) Start making rice.
5) Add peas, hot pepper, potato, and 1/4 cup water and bring to boil. Cover, and cook low for 30+ min until potatoes are tender. Serve over rice.

This always has a weaker curry taste than I would like

last time, this didn't seem very stew-like

Added 1 tsp of Marmite.
Swapped 1 can of peas, and one can of mushrooms.
Forgot the pepper.
Used 1 large can of whole stewed tomatoes and diced before adding, along with the liquid.
Reduced added water to 1/2 cup, and only added with tomatoes.
