Ingredients
- Bread
- 275 g whole wheat flour
- 175 h white flour
- 1/2 tsp salt
- 1 tsp baking powder
- 2 Tbs oil
- 1/2 cup (115 g) yogurt
- 2/3 cup warm water
- oil, for frying
- Filling
- 3 eggs, beaten
- 1 red onion, chopped
- 1 diced red chili
- 2 Tbs (10 g) cilantro, chopped
- 1/4 tsp salt
Steps
1) Combine flour, salt, baking powder. Add oil and yogurt and gently mix. Gradually add water to form dough
2) Kneed for 10 min. Cover and rest 30 min
3) Combine filling ingredients
4) Divide dough into 8 portions. Roll into 7" circle. Keep others covered while working.
5) Heat frying pan on medium.
Cook bread 30 seconds in dry pan
Flip
Cook bread 30 seconds
Drizzle oil around edges of pan.
Cook 1 min
Flip
Add 2 Tbs filling and reduce temp. Drizzle oil around edges
Once egg starts to set, fold bread in half
Cook until fully set
Remove from heat and cover while cooking remaining bread.

Ana prefers the onions to be fried first

She remembers this was her favorite, but claims i ruined them by not frying the onions
