Ingredients
- 2 lb cherry tomatoes
- 1 yellow onion large pieces chopped
- 2 heads of garlic with top slices of
- 2 potatoes chopped
- Pepper
- 1 1/2 cup veg broth
- Salt
- 1/2 cup fresh basil
- Olive oil 2 tbsp
Steps
Preheat oven at 400F
On a parchment lined baking sheet, add tomatoes, potatoes, onion, garlic, and sprinkle oil, salt and pepper on top.
Bake for 35 min
Once you can handle the veggies add them to a pot with the stock and blend. Adjust seasoning
Process the basil in a food processor and add on top of the soup when serving it.
