Ingredients

  • 2 lb cherry tomatoes
  • 1 yellow onion large pieces chopped
  • 2 heads of garlic with top slices of
  • 2 potatoes chopped
  • Pepper
  • 1 1/2 cup veg broth
  • Salt
  • 1/2 cup fresh basil
  • Olive oil 2 tbsp

Steps

Preheat oven at 400F On a parchment lined baking sheet, add tomatoes, potatoes, onion, garlic, and sprinkle oil, salt and pepper on top. Bake for 35 min Once you can handle the veggies add them to a pot with the stock and blend. Adjust seasoning Process the basil in a food processor and add on top of the soup when serving it.
