Ingredients

  • 6 corn tortillas, sliced into strips
  • Extra Vrigin olive oil
  • Salt
  • 4 bell peppers
  • 1/2 cup quinoa
  • 1 cup water
  • 1 can black beans, rinsed and dried
  • 2 radishes, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup pepitas or sunflower seeds, roasted and salted
  • 1 avocado
  • Dressing
    • 2 Tbs extra virgin olive oil
    • 1 Tbs lime juice
    • 1/4 tsp maple syrup or honey
    • 1/2 tsp cumin
    • 1/2 tsp coriander
    • 1 tsp chili powder
    • salt
    • pepper
  • Chili Spiced Yogurt
    • 1/2 cup greek yogurt
    • 1 - 2 tsp chili powder
    • 2 tsp lime juice
    • 1/4 tsp honey
    • salt
    • pepper

Steps

Cook quiona and cool Heat oven to 350 F. Toss tortilla strips in olive oil and salt. Bake 12 min Grill or broil peppers, turning occasionally, until blackened. Cool in plastic bag. Remove skin. Slice Combine dressing ingredients Combine yogurt ingredients. Assemble Salad. Top with dressing. Serve topped with yogurt.
