Ingredients

  • Florets of 2 broccoli crowns,
  • 1 can checkpeas, rinsed and drained
  • extra virgin olive oil
  • 1 cup israeli couscous
  • 1 Tbs capers
  • 1/4 cup walnuts, toasted
  • 1/4 tsp red pepper flakes
  • salt
  • pepper
  • 1/4 cup parmesan, shredded
  • Pesto
    • 1/4 cup basil, fresh
    • 1/4 cup walnuts, toasted
    • 1 clove garlic
    • 2-3 tbs extra virgin olive oil
    • 2 Tbs lemon juice
    • 1 tsp lemon zest
    • salt
    • pepper

Steps

Preheat oven to 400 F Toss broccoli with olive oil. salt, pepper. Bake 20 min. Toss chickpeas with olive oil, sat, pepper. Bake 20 min. Cook couscous. Make pesto in food processor Combine all ingredients, topped with pesto.
