Ingredients
- Step 1
- Olive Oil
- 1 cup chopped zucchini or summer squash (1-2)
- 1/2 medium onion, chopped
- 1 clove garlic
- 1/2 bell pepper, not the same color as the squash
- 1/2 jalapeno, diced
- 1/2 tsp salt
- 1/2 tsp cumin
- Step 2
- 1/2 tsp oregano
- 1 small or medium tomato, chopped
- Corn tortillas
- 1/4 cup queso fresco
Steps
Fry Step 1 ingredients until mostly dry or brown
Add Step 2 ingredients and simmer until most liquid is evaporated
In another frying pan, heat salt & oil. Add a tortilla and slide around to coat. Flip the tortilla once soft, and slide around to coat in remaining oil. Add cheese on half of tortilla, and fold in half. Cook until slightly crispy. In the meantime, start the next tortila.
Remove tortilla, open, and add fried veggies.
