Ingredients
- Pork Marinade
- 1 lb pork tenderloin
- 1/4 cup olive oil
- 1/4 cup orange juice
- 2 cloves garlic
- 1/2 tsp oregano
- 1/4 tsp cumin
- salt
- pepper
- Cuban Bread (or ciabatta)
- 1 lb Swiss cheese, sliced
- 1 lb smoked ham, thinly sliced (appliewood?)
- 1 cup pickle chips
- 1/4 cup brown or dijon mustard
Steps
Make marinade in plastic bag. Add pork and marinade in the fridge for 1-6 hours.
Cook at 400C for 20-25 minutes until internal temperature just reaches 145C. Rest at room temp for 5-10 min. Thinly slice
Slice the bread. Spread mustard on the top slice.
Add 2 slices cheese, several slices of ham, sliced pork, pickles, 2 slices of cheese.
Wrap in aluminum foil and bake 15-20 min at 40 C
If using Cuban bread, press as flat as you can.
