Ingredients
- 1/2 red onion, shopped
- 18 oz cheeses tortellini
- 4 oz salami
- 8 oz fresh mozzarella
- 12 oz artichoke quarters, drained
- 1 pint grape tomatoes
- 1/4 cup olive oil
- 3 Tbs red wine vinegar
- 1/2 tsp dried oregano
- 1 Tbs fresh parsley, chopped
Steps
Soak onion in cold water 15 min. Drain and pat dry
Cook tortellini. Drain and cool under running water.
Dice salami & mozzarella. Chop artichokes and halve tomatoes.
Mix oil, vinegar, oregano.
Toss all ingredients.
Cover and refrigerate 1-24 hours.
