Ingredients
- 1 Tbs oil
- 1 onion, chopped
- 1 lb chicken thighs, cut bitesize, or tofu
- 2 medium gold potatoes
- 1 large carrot
- 4 Tbs yellow curry paste
- 2 tsp ginger, fresh
- 2 cloves garlic
- 2 cans coconut milk
- 2 tsp cornstarch
- 2 tsp fish sauce
- 1 Tbs lime juice
- 1 1/2 Tbs brown sugar
- cooked rice
- cilantro, to garnish
Steps
Start cooking rice
Saute onions until soft.
Add chicken, carrots, potatoes. Cook 2 min.
Add ginger, garlic, curry paste. Cook 3 min
Add 1 1/2 cans coconut milk.
Mix cornstarch and remaining coconut milk. Add.
Simmer 20-30 min until chicken and potatoes are cooked.
Add fish sauce, brown sugar, lime juice. Simmer 5 min.
Serve over rice.

Needs more salt. Increased fish sauce from 1 to 2 tsp.
Added an eggplant because i needed to use it up.
