Ingredients
- Chicken
- 4 chicken breasts, or filets for cachopos
- 8 slices swiss cheese
- 8 slices ham/jamon
- 1 c flour
- 2 eggs, beaten
- 2 c panko bread crumbs
- salt
- pepper
- 4 Tbs butter, melted
- 1 tsp oregano
- Toothpicks
- Sauce
- 4 Tbs butter
- 1/4 tsp flour
- 2 c milk
- 2 Tbs dijon
- 1/4 c. Parmesan
Steps
Preheat oven to 400 F
Pound chicken to 1/4". Add 2 slices cheese and 2 slices ham. Roll up, and secure with toothpicks
Mix flour, salt, pepper in a bowl
Coat chicken with flour, then eggs, then breadcrumbs. Bake 30 min.
Meanwhile, make sauce
Melt butter, add flour.
Then add milk, mustard until thickened. Add parmesan and season with salt and pepper.
Serve chicken topped with sauce
