Ingredients

  • 1.5 lb sweet potato
  • 1 lb potato
  • 350 g (2 3/4 c) flour
  • 1 Tbs salt
  • 1/3 c grated parmesan cheese
  • 1 cup watercress leaves, chopped
  • 1 clove garlic, crushed
  • 2 oz butter
  • 2 Tbs parsley, chopped (garnish)

Steps

1) Set oven to broil 2) Boil all potatoes. Cool & peel. Mash into bowl. Add flour, salt, parmesan, watercress, garlic, salt, pepper. Gently mix with hands. Do not overrwork! Shape into gnocchi 3) Melt butter and add to roasting pan. 4) Cook gnocchi 2 min in large pot of salted water. Lay cooked gnocchi in roasting pan. Broil for 5 min 5) Serve with parmesan and parsley

    Increased salt from nothing to 1 Tbs. Was delicious, but I could maybe back off to 2 tsp
