Ingredients
- 2 onions, chopped
- 6 cloves garlic, crushed
- 2 in. ginger, grated
- 6 Tbs olive oil
- 2 Tbs black poppy seeds
- 1 tsp coriander seeds
- 1 tsp cumin seeds
- 1/2 tsp turmeric
- 1 lb lamb, trimmed to bitesize pieces
- 1/4 tsp cayenne pepper
- 5 cups lamb stock
- 1/3 cup long grain rice
- 2 Tbs lemon juice
- 4 Tbs coconut milk
- salt
- pepper
- cilantro (for garnish)
- flaked coconut (for garnish)
Steps
Purre onion, garlic, ginger, 1 Tbs oil to make a paste
Toast poppy, cumin, coriander seeds in a dry pan. Grind. Ad turmeric.
Heat remaining oil. Fry lamb 4-5 min in batches. Set lamb aside.
Add paste to pan and fry 1-2 min. Add spices for 1 min. Add meat & juices. Add cayenne, stock, salt, pepper.
Simmer 30-35 min.
Add rice. Cook 15 min.
Add lemon juice. Cook 2 min.
Serve with cilantro and toasted coconut flakes
