Ingredients

  • 1 cup chickpeas, dried
  • 8 cups vegetable stock
  • 3 large potatoes, cut to bitesize chunks
  • 1/4 cup olive oil
  • 8 oz spinach, fresh
  • 1 tsp salt
  • 1/4 tsp pepper
  • spicy sausage or kielbasa

Steps

1) Soak chickpeas overnight. 2) Change water and simmer for 1 hour 3) Add potatoes, olive oil, salt, pepper. Cook 20 minutes 4) Add spinach and sausage. Cook 5 min.
