Ingredients

  • 4 c whole milk *
  • 1/3 cup sugar (75 g) *
  • 1 tsp vanilla *
  • seeds from 8 cardamom pods, crushed *
  • 1 c short grain rice *
  • salt *
  • 1 1/2 Tbs rose water *
  • 4 oz dried apricots, roughly chopped **
  • 2 tsp lemon juice **
  • seeds from 2 cardamom pods, crushed **
  • 2 Tbs honey **
  • 1 tsp rose water **
  • 2 Tbs pistachios, chopped
  • 1 Tbs edible dried rose petals (optional)

Steps

1) Mix milk, sugar, vanilla, cardamom seeds. Boil and stir to dissolve sugar. Add rice and salt. Cover. Simmer 30-40 min, stirring every few minutes. Add up to 1/2 cup boiled water if it is too dry. 2) Mix apricots, lemon juice, cardamom, and 3/4 cup boiling water. Cover and simmer (10 min). Add honey (5-10 min) until apricots are soft. Add rose water (**) gradually 3) Add rose water (*) gradually to rice and cook a few minutes. Rose water concentration can vary, so don't do it all at once. 4) Serve in glasses topped with apricot compote, pistachio, and rose petals.
