Ingredients
- Chicken
- 1 whole chicken, or pieces
- 4 Tbs olive oil
- 2 Tbs lemon juice
- 1 Tbs allspice
- 1 tsp cumin
- 4 cloves garlic, crushed
- 1.5 tsp salt
- 1/2 tsp pepper
- Sauce
- 3/4 cup plain greek yogurt (250 g)
- 3 Tbs (50g) tahini
- 1 clove garlic, crushed
- 3 Tbs water
- 1/2 tsp salt
- 1/4 tsp pepper
- Pine Nuts
- 1 Tbs salted butter
- 1/4 cup pine nuts
- Flatbreads
- 1 can chickpeas, rinsed and drained
- 3 Tbs parsley
- 1 1/2 Tbs sumac
- Pomegranate seeds
- Extra Virgin Olive Oil
Steps
Cut chicken into pieces, leaving skin on. Rub with remaining ingredients. Bake at 350 for 40 min.
Remove chicken from pan. Add 2/3 cup water to pan and collect all of the gravy.
Whisk yogurt ingredients together.
Cut flatbreads into strips and toast for 10 minutes until crispy.
Melt butter and toast pine nuts
Serve on plate: Toasted flatbread -> chicken -> chickpeas -> gravy -> yogurt sauce -> pine nuts -> parsley -> sumac -> pomegranate seeds -> olive oil
