Ingredients

  • 1 tbsp olive oil
  • 1 lb of impossible meat
  • 1 chopped onion
  • 1 garlic
  • 2tbs chili powder
  • 1 tbs ground cumin
  • 1 tsp salt
  • 1 tsp pepper
  • 1/4 tsp cayenne
  • 2 tomatoes that I cooked and purée, but other can used 14 oz can tomato puree
  • 1 cauliflower head cut in 1 inch pieces
  • 8 oz grated cheddar cheese
  • 1 avocado
  • Sour cream

Steps

1) Heat the oil in a large Dutch oven over medium heat. Add the beef and cook until mostly cooked through with a little pink remaining, breaking up any clumps with a wooden spoon. 2) Add the onions, garlic, chili powder, cumin, salt, pepper, and cayenne, and cook until fragrant, one more minute. Stir in the tomatoes. 3) Reduce the heat to low and simmer for 30 minutes. Add the cauliflower and continue to cook until tender, another 15 minutes or so. 4) Serve with avocado, sour cream, and cheddar cheese on top
