Ingredients
- 1/2 cup unsalted butter (120g)
- scant 1/2 cup brown sugar (90g)
- scant 1/2 cup sugar (90g)
- 1 egg + 1 egg yolk
- 4 1/2 Tbs Tahini (70g)
- 1 tsp vanilla
- 1 1/2 c (180g) flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 tsp cinnamon
- 1/3 c cocoa powder (25g)
- 6 oz (170g) good quality dark chocolate, roughly chopped
Steps
Combine sugar.
Melt butter, cool 5 min. Add to sugar. Beat well
Add egg, yolk, tahini, vanilla. Beat until creamy.
Add flour, baking soda, baking powder, salt, cinnamon. Beat.
Add cocoa and chocolate. Stir to combine.
Cover and let rest 1 hour to overnight.
Heat oven to 350 C
Form 12 balls on parchment paper. Cook 15 min
Cool 5 min. Move to wire rack. Cool completely before eating
