Ingredients

  • 8 oz Quinoa, dry
  • 1/2 cup frozen peas and carrots, thawed
  • 5 Tbs olive oil
  • 2 Tbs lemon juice
  • 1 tsp oregano
  • 2 medium tomatoes, chopped
  • 1/4 cup Kalamata olives, chopped
  • 1/4 cup chopped red onion
  • salt
  • pepper
  • 2 cups rotisserie chicken, or sautéed mushrooms and boiled eggs
  • 1/2 cup feta

Steps

Cook quinoa. Add in veggies. In a new bowl, mix oil, lemon juice, oregano. Add tomatoes, olives, onion, salt and pepper Serve, topped with chicken (or mushrooms/eggs) and feta
