Ingredients
- 8 oz Quinoa, dry
- 1/2 cup frozen peas and carrots, thawed
- 5 Tbs olive oil
- 2 Tbs lemon juice
- 1 tsp oregano
- 2 medium tomatoes, chopped
- 1/4 cup Kalamata olives, chopped
- 1/4 cup chopped red onion
- salt
- pepper
- 2 cups rotisserie chicken, or sautéed mushrooms and boiled eggs
- 1/2 cup feta
Steps
Cook quinoa.
Add in veggies.
In a new bowl, mix oil, lemon juice, oregano. Add tomatoes, olives, onion, salt and pepper
Serve, topped with chicken (or mushrooms/eggs) and feta
