Ingredients

  • 2 Tbs olive oil
  • 2 shallots, chopped
  • 1 clove garlic, crushed
  • 8 oz (250g) asparagus - cut to 3/4"
  • salt
  • pepper
  • 5 eggs
  • 2 tsp za'atar
  • extra virgen olive oil

Steps

Sauté shallots, 10 min. Add garlic for a few minutes Add asparagus, 1/2 tsp salt, 1/2 tsp pepper. Reduce to medium. Cook covered 5 minutes until soft. Mix eggs with salt and pepper, and add to pan. Serve with za'atar and olive oil
