Ingredients
- 2 Tbs olive oil
- 2 shallots, chopped
- 1 clove garlic, crushed
- 8 oz (250g) asparagus - cut to 3/4"
- salt
- pepper
- 5 eggs
- 2 tsp za'atar
- extra virgen olive oil
Steps
Sauté shallots, 10 min. Add garlic for a few minutes
Add asparagus, 1/2 tsp salt, 1/2 tsp pepper. Reduce to medium. Cook covered 5 minutes until soft.
Mix eggs with salt and pepper, and add to pan.
Serve with za'atar and olive oil
