Ingredients
- 2 Tbs Olive Oil
- 1 Onion, chopped
- 4 cloves garlic, crushed
- 500 g stew beef, 5 cm chunks
- 2 Tbs cornstarch
- 1 tsp ground coriander
- 1 tsp ground allspice
- 1 tsp caraway seeds
- 1 can (1/2 c dried) chickpeas
- 1 Tbs tomato paste
- 500 mL chicken stock
- 1 tsp salt
- pepper
- 1 Tbs sumac
- 2 Tbs (30g) tahini
- 1 Tbs sesame oil
- 1/4 tsp red pepper flakes
- 2 Tbs pomegranate molasses
- 500 g swiss chard or spinach
- 1 green chilli, chopped
- bread, rice, or mashed potatoes
Steps
Saute onion in oil 10 min. Add garlic 2 min
Toss beef in cornstarch. Add to onions and sear.
Add coriander, allspice, caraway 1 min
Add chickpeas, tomato paste, chicken stock. Add water as needed to cover meat.
Cover and simmer 1.5 hrs
Add sumac, tahini, sesame oil, red pepper, pomegranate molasses, salt. Stir to combine
Add chard, green chili 5 min.
season on with salt and pepper
Serve over bread, rice, or mashed potatoes
