Ingredients

  • 2 Tbs oil
  • 1 onion, finely chopped
  • 1 tsp coriander seeds
  • 1 tsp cumin seeds
  • 1/2 tsp ground allspice
  • 2 cloves garlic, crushed
  • 1 14-oz can pinto beans, drained and rinsed
  • 1 cup freekeh, rocks removed
  • 2 carrots, peeled and finely chopped
  • 2 celery sticks, finely chopped
  • 4 cups vegetable stock
  • 2 cups boiling water
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 Tbs extra virgin olive oil
  • 2 Tbs lemon juice
  • plain yogurt, to serve
  • 3 1/2 Tbs (15 g) chives, chopped

Steps

Fry onions for 10-15 min. Meanwhile, toast coriander and cumin. Grind. Add to onions. Add allspice, garlic. Fry 2 min. Add pinto, freekeh, carrots celery, stock, water. Simmer 45 min. Add salt, pepper, olive oil, lemon juice. Cook 2 min Serve topped with yogurt, chives, and extra virgin olive oil

    watch out for rocks in the freekeh!

    Substuited 1 cup barley and 1/2 tsp liquid smoke for freekeh. Barley swells to much. Use less
