Ingredients
- 2 Tbs oil
- 1 onion, finely chopped
- 1 tsp coriander seeds
- 1 tsp cumin seeds
- 1/2 tsp ground allspice
- 2 cloves garlic, crushed
- 1 14-oz can pinto beans, drained and rinsed
- 1 cup freekeh, rocks removed
- 2 carrots, peeled and finely chopped
- 2 celery sticks, finely chopped
- 4 cups vegetable stock
- 2 cups boiling water
- 1 tsp salt
- 1/2 tsp pepper
- 2 Tbs extra virgin olive oil
- 2 Tbs lemon juice
- plain yogurt, to serve
- 3 1/2 Tbs (15 g) chives, chopped
Steps
Fry onions for 10-15 min.
Meanwhile, toast coriander and cumin. Grind. Add to onions. Add allspice, garlic. Fry 2 min.
Add pinto, freekeh, carrots celery, stock, water. Simmer 45 min.
Add salt, pepper, olive oil, lemon juice. Cook 2 min
Serve topped with yogurt, chives, and extra virgin olive oil

watch out for rocks in the freekeh!

Substuited 1 cup barley and 1/2 tsp liquid smoke for freekeh. Barley swells to much. Use less
