Ingredients
- 250 g chickpeas, dried (1 1/4 cup)
- 1 tsp baking soda
- 3 cloves garlic, rushed
- 6 Tbs lemon juice
- 3/4 cup tahini (180 g)
- 1/2 tsp ground cumin
- 1 1/2 tsp salt
- 4 ice cubes
- extra virgin olive oil
- z'atar, paprika, or cumin to serve
Steps
Soak chickpeas overnight.
Drain chickpeas. Add baking soda and water and simmer. Simmer 40 min.
Drain. Process with garlic, lemon juice, tahini, cumin, salt.
Add ice cubes and process 2 minutes until creamy. Adjust to taste
Cool to room temperature for 1 hour.
Serve topped with olive oil and seasoning

Delicious but a little dry

It's better now. I don't think I changed the recipe, but the tahini I'm using now is more liquid than the previous version
