Ingredients

  • 1/4 cup quinoa
  • 1/2 large red onion, diced
  • 1 cup chopped mushrooms
  • salt and pepper
  • 1 15-oz can black beans (1/4 lb dried)
  • 1 cup beets, grated
  • 1/2 Tbs cumin
  • 1/2 tsp paprika
  • 1/2 cup walnuts, crushed or ground

Steps

1) Cook quinoa 2) Saute onion with salt & pepper, 5 min. Add mushrooms, salt & pepper (3 min). Remove from heat and mash with back beans 3) Mix onion mix with quinoa, beets, spices. Optionally add some worcestershire sauce. Add 1/4 tsp salt. Gradually fold in walnuts. 4) Form into patties (~8) 5) Bake 375 min for 25-30 min. Flip and cook 5-15 min more until somewhat dried out. Serve on hamburger buns 6) To Freeze: bake at 375 for 15-20 min. Cool and stack on parchment paper. Freeze. Cook from frozen at 375 for 25-35 min.
