Ingredients
- 1 Tbs Olive Oil
- 2 Tbs butter
- 1 large onion, sliced
- 1 1/2 lb pumpkin, coarsely diced
- 1 lb potatoes, sliced
- 2 1/2 cups vegetable stock
- pinch of nutmeg
- 1 Tsp chopped fresh tarragon
- 2 1/2 cups milk
- 1-2 tsp lemon juice
- salt
- pepper
Steps
Saute onion in oil and butter for 4-5 min until soft but not brown.
Add pumpkin and potatoes. Cover and sweat on low for 10 min until tender. Stir occasionally
Add stock, nutmeg, tarragon, salt, pepper. Simmer 10 min
Blend.
Add milk and heat genly. Add lemon juice, salt and pepper to taste.
