Ingredients
- 500 g ground beef
- 1 small onion, chopped
- 1-2 cloves garlic
- 1 tsp cumin
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 green chile pepper, diced
- 1 can refried beans
- 6 12-inch tortillas
- Enchilada Sauce
- 3 c mexican cheese, grated
- green onions - garnish
- lettuce - garnish
- tomato - garnish
- sour cream - garnish
Steps
Preheat oven to 200 C
Brown onion and beef. Drain. Add garlic, cumin, salt, pepper, green chilies, and refried beans.
Soften tortillas. Add beef mixture. Top with some cheese, reserving most for later, and wrap up.
Top with enchilada sauce and remaining cheese and bake 15-20 minutes.
Serve, topped with lettuce, tomato, sour crem, chives/green onions
