Ingredients
- 1/4 cup breadcrumbs
- 1 Tbs salt
- 2 tsp baking powder
- 1/8 tsp pepper
- 3 lb russet potatoes (3-4), peeled
- 1 lb onions (3)
- 1 egg
- 2 Tbs crisco or chicken fat or similar (or vegetable oil)
- 2 Tbs vegetable oil
Steps
Place wire rack on a baking sheet. Line with 2 layers of paper towels
Combine breadcrumbs, baking powder
Grate potatoes and onions. Wrap in kitchen towel, and wring out liquid. Repeat.
Mix potatoes/onions with breadcrumb mixture and eggs.
Heat oven to 220 C.
Cook latkes in frying pan with fats, ~2 min per side, making sure to keep 1/8" fat in pan during cooking.
Let drain on wire rack.
Once all are done, heat in oven 5 minutes until re-warmed and crisp.
