Ingredients
- 2 lb spinach
- 1/4 cup olive oil
- 1 onion, chopped
- 10 green onions, sliced
- 4 Tbs parsley
- 1 Tbs dill
- 1/8 tsp nutmeg
- 5 oz crumbled feta
- 4 oz ricotta cheese
- 4 eggs, beaten
- 1 stick butter
- 2 Tbs olive oil
- 12 sheets filo
- 1/2 tsp salt
Steps
1) Preheat oven to 350 and grease baking trays
2) Chop spinach and wilt over low heat. Squeeze out excess water
3) Saute onion (10 min). Add green onion (3 min). Add in herbs, spices, salt, cheeses, and egg. Mix
4) Melt butter and mix with 2 Tbs olive oil
5) Brush 3 sheets of filo with butter mixture, and layer. Cut in half, lengh-wise. Fill with 4 Tbs filling and fold into triangles. Repeat
6) Bake 20 minutes
