Ingredients
- 2 tbs butter
- 4 cloves garlic, crushed
- 1 onion, chopped
- 1 inch ginger, sliced
- 2 Tbs red curry paste
- 1 lb carrots, roughly chopped
- 2 sweet potatoes, chopped
- 3 cups chicken stock
- 1 can coconut milk
- Salt and pepper
- 1/3 cup cilantro
- 1/4 cup basil
- 2 Tbs lime juice
- 2 Tbs peanuts, crushed
Steps
Melt butter and sauté garlic and onion for 4 min. Add ginger and curry paste, 1 min.
Add carrots, sweet potatoes, stock, coconut milk, salt, pepper. Simmer 25 min until tender.
Remove from heat.
Add cilantro, basil, salt, pepper. Blend.
Serve, topped with peanuts
