Ingredients
- 1 large yellow onion
- 1 red bell pepper
- 3/4 tsp garlic powder
- 15 oz can white beans drained and rinsed
- 15 oz can black beans drained and rinsed
- 28 oz can tomatoes diced with liquid
- 14 oz can pumpkin puree
- 1 cup vegetable broth
- 2 tsp chili powder
- 1 tbsp cocoa powder
- 2.5 tsp ground cumin
- 1/2 tsp ground black pepper
- 1/2 tsp ground black pepper
- 1/2 tsp cayenne pepper
- 4 cups baby spinach
- topping: avocado, cilantro, sour cream
Steps
1) fry onions and pepper with oil in a pan for 7 minutes. Stir in the garlic for 30 seconds
2) Add beans and diced tomatoes, tomato paste, pumpkin puree, broth, chili powder, cocoa powder, cumin, black pepper, cayenne pepper and stir. Reduce heat and shimmer for 30 min
3) Right before serving add the spinach till they are wilt and salt to taste.
4) Add toppings when serving.
