Ingredients
- 12 oz potatoes
- 4 Tbs olive oil
- 1/2 tsp anise seed
- 1 tsp mustard seed
- 1 tsp cumin seed
- 1 onion, chopped
- 1 long chili, deseeded
- 1/2 tsp ground tumeric
- 1 tsp ground cumin
- 1 cup frozen peas, thawed
- 1/2 cup carrots, grated (75 g)
- 1 tsp salt
- 1/2 tsp garam masala
- Filo pastry, thawed
- 2 sticks butter
Steps
1) Cut potatoes to bite-sized pieces and boil ~20 min until tender. Drain
2) Heat oil over medium heat. When hot add seeds and stir 1 min until they start to pop.
Add onion and chili and saute
3) Add tumeric and cumin. Cook 1 min. Add potatoes, peas, carrots, salt. Stir until coated. Cool to room temperature.
4) Preheat oven to 350. Lightly grease baking sheet.
5) Melt butter
6) Brush a filo sheet with butter. Fold in thirds lengthwise. Brush one more time.
Add 1 Tbs filling to one end and fold to triangle. Place on baking sheet
7) Brush all completed samosas with butter.
Bake 20 minutes until browned.
