Ingredients
- 1 inch chunk fresh ginger peeled
- 4 lbs boneless pork shoulder
- 1/4 cup Korean barbecue sauce
- 1 clove garlic
- 1 tbsp miso paste
- 1 tbsp sesame oil
- 1/2 cup rice wine vinegar
- 1 cup shredded carrots
- 16 6 inch flour tortillas
- 3 green onions sliced
Steps
1) Sliced ginger, cut pork into small chunks. Add ginger and pork to slow cooker
2) In a bowl whisk barbecue sauce, garlic, miso paste, sesame oil, 1/4 cup of rice wine vinegar. Pour over pork. Cook on low covered for 6 to 8 hours
3) 30 min before serving convine the carrots with 1/4 cup of rice wine vinegar. Let it stand
4) Shred pork and return to cooker
5) Serve pork in tortillas topped with carrots and green onions
6) Garnish with sesame oil
