Ingredients
- 2 Tbs extra virgin olive oil
- 1 onion, chopped
- 2 stalks celery, sliced
- 1 cup carrots, sliced
- 1/4 tsp salt
- 1/2 tsp turmeric
- 1/2 tsp curry poweder
- 1 bay leaf
- 1/2 cup dry chickpeas, or 1 can
- 8 oz spiral pasta
- 2 Tbs parsley
- 2 quarts vegetable broth (4 cubes of powder)
- 1/4 tsp black pepper
Steps
Soak chickpeas overnight, and then cook 1 hour. Drain.
Heat oil and cook onion, celery, carrots, salt. 5-7 min. Add turmeric, curry powder 30 sec. Add bay leaf, chickpeas, pasta, parsley, broth.
Cook 10-20 min
Season with salt and pepper
