Ingredients

  • 2 Tbs extra virgin olive oil
  • 1 onion, chopped
  • 2 stalks celery, sliced
  • 1 cup carrots, sliced
  • 1/4 tsp salt
  • 1/2 tsp turmeric
  • 1/2 tsp curry poweder
  • 1 bay leaf
  • 1/2 cup dry chickpeas, or 1 can
  • 8 oz spiral pasta
  • 2 Tbs parsley
  • 2 quarts vegetable broth (4 cubes of powder)
  • 1/4 tsp black pepper

Steps

Soak chickpeas overnight, and then cook 1 hour. Drain. Heat oil and cook onion, celery, carrots, salt. 5-7 min. Add turmeric, curry powder 30 sec. Add bay leaf, chickpeas, pasta, parsley, broth. Cook 10-20 min Season with salt and pepper
