Ingredients
- 1/4 c extra virgin olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 4 cloves garlic, pressed
- 2 tsp cumin
- 1 tsp curry powder
- 1/2 tsp thyme
- 1 can (28 oz) diced tomatoes, drained
- 1 c brown lentils
- 4 c vegetable broth
- 2 c water
- 1 tsp salt
- red pepper flakes
- black pepper
- 1 cup kale, chopped
- 1-2 Tbs lemon juice
Steps
Saute onion and carrot 5 min until translucent
Add garlic, cumin, curry powder, thyme. Cook 30 s. Add tomatoes and cook 5 min more.
Add lentils, broth, water, salt, red pepper flakes, black pepper. Simmer 25-30 min.
Blend 2 cups and mix back in.
Add kale 5 min until sof. Add lemon juice.
Season with additional salt, pepper, lemon juice.
