Ingredients

  • 1/4 c extra virgin olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 4 cloves garlic, pressed
  • 2 tsp cumin
  • 1 tsp curry powder
  • 1/2 tsp thyme
  • 1 can (28 oz) diced tomatoes, drained
  • 1 c brown lentils
  • 4 c vegetable broth
  • 2 c water
  • 1 tsp salt
  • red pepper flakes
  • black pepper
  • 1 cup kale, chopped
  • 1-2 Tbs lemon juice

Steps

Saute onion and carrot 5 min until translucent Add garlic, cumin, curry powder, thyme. Cook 30 s. Add tomatoes and cook 5 min more. Add lentils, broth, water, salt, red pepper flakes, black pepper. Simmer 25-30 min. Blend 2 cups and mix back in. Add kale 5 min until sof. Add lemon juice. Season with additional salt, pepper, lemon juice.
