Ingredients
- 2 Tbs Oil
- 1 onion
- 3 cloves garlic, minced
- 1 inch ginger, minced
- 1 Tbs garam masala
- 2 tsp ground coriander
- 1 tsp cumin
- 1 tsp tumeric
- 30 oz canned chickpeas, drained
- 30 oz diced tomatoes
- 14 oz coconut milk
- 1 cauliflower, cut into florets
- Salt & Pepper
- 1/4 cup cilantro, chopped
- Rice or Naan to serve
Steps
1) Start cooking rice
2) Saute onion, garlic, ginger until soft
Add spices and cook 1 minute until fragrant.
3) Add remaining ingredients (except cilantro). Cover and simmer for 15 min. Then uncover and cook 5 minutes to thicken.
4) Add cilantro and serve over rice.
