Ingredients

  • 2 Tbs Oil
  • 1 onion
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 Tbs garam masala
  • 2 tsp ground coriander
  • 1 tsp cumin
  • 1 tsp tumeric
  • 30 oz canned chickpeas, drained
  • 30 oz diced tomatoes
  • 14 oz coconut milk
  • 1 cauliflower, cut into florets
  • Salt & Pepper
  • 1/4 cup cilantro, chopped
  • Rice or Naan to serve

Steps

1) Start cooking rice 2) Saute onion, garlic, ginger until soft Add spices and cook 1 minute until fragrant. 3) Add remaining ingredients (except cilantro). Cover and simmer for 15 min. Then uncover and cook 5 minutes to thicken. 4) Add cilantro and serve over rice.
