Ingredients

  • 1 Tbs oil
  • 2 medium onions
  • 3/4 tsp salt
  • 3 cloves garlic
  • 1 medium (2 lb) pumpkin or butternut squash
  • 3-4 c water
  • 3-4 Tbs white miso
  • 1 Tbs minced ginger
  • 175 g soba noodles
  • Toppings
    • green onion, sliced
    • sesame seeds
    • sauteed shiitake mushrooms
    • seaweed

Steps

Wash pumpkin and dice, including skin. Saute onions and salt 10 min. Add garlic 1 min. Add pumpkin. Add 3 cups water. Simmer 15 min Meanwhile: -In a new pot, cook soba noodles. -Toast sesame seeds 2-3 min -Saute mushrooms 5-7 min Add ginger and miso to soup and blend. Add water if needed. Season to taste Serve soup topped with noodles and other toppings.
