Ingredients
- 4 Tbs high heat oil
- 4 eggs
- 4 cloves garlic, pressed
- 1.5 cups green onions, chopped (2 bunches)
- 1 cup veggies (bell pepper, carrot, brussels sprouts)
- 2 medium bunches kale
- 1/2 tsp salt
- 1.5 cups unsweetened coconut flakes (not shredded)
- 4 cups cooked brown rice (cooled)
- 4 Tbs soy sauce
- 4 Tbs chili garlic sauce
- 2 limes, halved

Steps
1) Cook scrambled eggs in a wide pan so it sets in a thin layer. Remove and roll up. Thinly Slice.
2) Fry garlic, green onions, and veggies until tender. Add kale and salt. Cook until wilted. Remove from heat and mix with eggs
3) Add 2 tsp oil and cook coconut until golden (30 sec). Add rice and cook until hot (3 min). Add veggies and eggs until warm. Remove from heat
4) Add soy sauce, chili garlic sauce, and juice of 1 lime. Add salt or soy sauce as needed
5) Serve garnished with cilantro, sliced limes, soy sauce, chili garlic and red pepper flakes
