Ingredients
- COCONUT BACON:
- 1 cup coconut flakes
- 1/2 Tbs olive oil
- 1/2 Tbs tamari
- 1/2 Tbs maple syrup
- 1/2 tsp paprika
- 1/4 tsp salt
- DRESSING:
- 2 Tbs cashew butter
- 2 Tbs olive oil
- 2 Tbs lemon juice
- 2 Tbs water
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1 tsp honey
- 1/2 tsp mustard
- SALAD:
- 2 heads broccoli florets
- 1/2 cup toasted slivered almonds
- 2 Tbs quinoa
- 2 Tbs toasted sesame seeds
- 1 avocado, cubed
- 1/4 cup fresh herbs (chives, mint, basil)
Steps
1) Make coconut bacon:
Heat oven to 300 F. Mix ingredients for coconut bacon. Spread onto a single layer on baking sheet lined with parchment paper. Cook 15-20 min, stirring half-way through, until dark brown and crisp. Cool fully.
2) Make Dressing:
Blend dressing ingredients until smooth.
3) Make Salad:
Blanch broccoli in 3 qts water for 2-3 min. Cool in ice water and then pat dry & finely chop. Toss with dressing. Add remaining ingredients & serve.
