Ingredients

  • COCONUT BACON:
  • 1 cup coconut flakes
  • 1/2 Tbs olive oil
  • 1/2 Tbs tamari
  • 1/2 Tbs maple syrup
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • DRESSING:
  • 2 Tbs cashew butter
  • 2 Tbs olive oil
  • 2 Tbs lemon juice
  • 2 Tbs water
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1 tsp honey
  • 1/2 tsp mustard
  • SALAD:
  • 2 heads broccoli florets
  • 1/2 cup toasted slivered almonds
  • 2 Tbs quinoa
  • 2 Tbs toasted sesame seeds
  • 1 avocado, cubed
  • 1/4 cup fresh herbs (chives, mint, basil)

Steps

1) Make coconut bacon: Heat oven to 300 F. Mix ingredients for coconut bacon. Spread onto a single layer on baking sheet lined with parchment paper. Cook 15-20 min, stirring half-way through, until dark brown and crisp. Cool fully. 2) Make Dressing: Blend dressing ingredients until smooth. 3) Make Salad: Blanch broccoli in 3 qts water for 2-3 min. Cool in ice water and then pat dry & finely chop. Toss with dressing. Add remaining ingredients & serve.
