Ingredients
- Yellow Rice
- 1 c basmati rice
- 2 Tbs butter
- 1 tsp turmeric
- 1 pinch saaffron
- 1 1/3 c water
- 3/4 tsp salt
- Chickpeas
- 2 Tbs Olive Oil
- 1 1/2 Tbs za'atar
- 2 cloves garlic, crushed
- 1/2 tsp salt
- 2 cans chickpeas, drained and rinsed
- 1/4 lemon, thinly sliced
- Jajik Sauce
- 1 cup yogurt
- 2 cloves garlic, pressed
- 1/4 Tbs minced herbs (cilantro, parsley, dill, and/or mint)
- 1 Tbs extra virgin olive oil
- 1/8 tsp black pepper
- 1/2 tsp salt
- 8 radishes, sliced
- Lemon wedges
- 2 Tbs minced herbs
Steps
Preheat to 425F
Soak rice 5 min. Rinse & drain.
Melt butter. Add turmeric and saffron (5 sec). Add rice, water, salt. Simmer covered 14 min. Remove from heat and let stand.
Toss chickpea ingredients. Roast on sheet pan 20 min, stir halfway through.
Stir together jajik sauce
Layer to serve: rice, chickpeas, jajik, radishes, herbs
