Ingredients
- 2-3 spaghetti squash (5.5#)
- 4 tsp + 1 tsp extra-virgin olive oil
- Salt & Pepper
- 4 cloves Garlic
- 6 oz baby spinach
- 2/3 cup grated Parmesan
- 2 cups pasta sauce
- 8 oz grated mozzarella
- pepperoni
- fresh basil
- pinch of red pepper flakes
Steps
1) Preheat oven to 400. Line a large baking sheet with parchment paper
2) Remove ends of squash. Slice in half and scoop out. Rub insides with olive oil, salt and pepper. Bake, flesh side down for 40-60 minutes until tender
3) Meanwhile: saute garlic 30 sec. Add spinach and cook to wilt
4) Fluff squash interiors with fork, making spaghetti-like.
Add all ingredients except basil and red pepper to squash. Bake 20 min until cheese starts to brown
5) Serve with basil and red pepper
