Ingredients

  • 2 Tbs quick-cooking tapioca
  • 2/3 cup sugar
  • 1/8 tsp Salt
  • 1 20-oz can canned tart cherries
  • 2 tsp Butter
  • 1 cup biscuit mix
  • 2 Tbs sugar
  • 1/3 cup Evaporated Milk

Steps

1) Drain cherries, saving juice and adding water if necessary to total 1 cup liquid 2) Mix tapioca, 2/3 cup sugar, salt, cherries and juice, and put in lightly buttered 11/2 quart baking dish 3) Dot top of cherry mixture with 2 tsp butter 4) Bake at 425F for 12 minutes 5) Mix biscuit mix, 2 Tbs sugar, and milk 6) Drop by tablespoonfuls on top of cherries to make 4 dumplings 7) Bake about 12 minutes longer, until dumplings are done
