Ingredients

  • 1 lb (0.5 kg) dry chickpeas
  • 1/2 tsp baking soda
  • 1 small onion, roughly chopped
  • 1/4 c chopped parsley
  • 3-5 cloves garlic
  • 1 1/2 Tbs flour
  • 1 3/4 tsp salt
  • 2 tsp cumin
  • 1 tsp coriander
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • pinch of ground cardamom
  • 1 tsp baking powder (optional)
  • Vegetable oil for frying

Steps

Soak chickpeas and baking soda overnight until double in size. Drain and rinse Blend in food processor to a coarse texture. Mix by hand. Cover and refrigerate 2 hours Form balls and fry 360-375 F (180-190C) for 5-6 minutes total. If the mixture is too delecate, you can process a little more smoothly, add 1-2 Tbs more flour, or even an egg
