Ingredients
- 1 Tbs Vegetable Oil
- 1 Tbs garlic, minsed
- 1/4 cup onion, diced
- 2 1/2 cups water
- 2 tsp salt
- 1/4 tsp pepper
- 2 cups quinoa
- 3/4 cup tomato, diced
- 3/4 cup carrots, diced
- 1/2 cup yellow bell pepper
- 1/2 cup cucumber
- 1/2 cup corn kernels
- 1/4 cup red onion, diced
- 1 1/2 Tbs cilantro
- 1 Tbs mint
- 1 tsp salt
- 1/4 tsp pepper
- 2 Tbs Extra Virgin Olive Oil
- 3 Tbs balsamic vinegar
Steps
1) Saute 1/4 cup onion and garlic. Add water, 2 tsp salt, 1/4 tsp pepper. Boil. Add quinoa and simmer 20 min. Refrigerate until cold
2) Combine all remaining ingredients
