Ingredients

  • 1 Tbs Vegetable Oil
  • 1 Tbs garlic, minsed
  • 1/4 cup onion, diced
  • 2 1/2 cups water
  • 2 tsp salt
  • 1/4 tsp pepper
  • 2 cups quinoa
  • 3/4 cup tomato, diced
  • 3/4 cup carrots, diced
  • 1/2 cup yellow bell pepper
  • 1/2 cup cucumber
  • 1/2 cup corn kernels
  • 1/4 cup red onion, diced
  • 1 1/2 Tbs cilantro
  • 1 Tbs mint
  • 1 tsp salt
  • 1/4 tsp pepper
  • 2 Tbs Extra Virgin Olive Oil
  • 3 Tbs balsamic vinegar

Steps

1) Saute 1/4 cup onion and garlic. Add water, 2 tsp salt, 1/4 tsp pepper. Boil. Add quinoa and simmer 20 min. Refrigerate until cold 2) Combine all remaining ingredients
