Ingredients
- 4 large jalapeño peppers (about 3 ounces each)
- 4 ounces cream cheese, divided into 4 pieces, chilled
- 1/2 teaspoon ground cumin
- Salt & Pepper
- 4 boneless chicken thighs (5 oz each)
- 4 slices Colby Jack
- 20 slices bacon
Steps
1) Remove stem of pepper. Slice down 1 side. Remove seeds & ribs. Microwave with 3 Tbs water, covered in plastic wrap for 2-3 minutes. Let cool
2) Stuff pepper with cream cheese. Squeeze to force out air.
3) Pound chicken to 1/4" thickness. Rub with spices
4) Layer chicken, cheese, and pepper. Roll up.
5) Lay out 5 strips of bacon, slightly overlapping, and roll around pepper.
6) Bake 45 minutes at 400F, until bacon is crispy and chicken is cooked (or grill on medium for 20 minutes, maybe)
