Ingredients
- 1 cup butter, room temp
- 1 cup sugar
- 2 Eggs
- 1 Tbs Lemon juice
- 1 tsp Vanilla
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 2 cup Flour
- 1/2 cup Chopped almonds
- 2 apples, peeled & sliced
- 1/2 cup apple jelly
- 1/2 cup sliced almonds
- confectioner's sugar
Steps
1) Preheat oven to 350F
2) Grease 9" spring-form pan
3) Beat butter and sugar until fluffy
4) Beat in eggs one at a time, then add lemon juice and vanilla
5) Stir in cinnamon & nutmeg, then flour until well blended
6) Stir in almonds
7) Measure out 3/4 cup of batter and set aside
8) Spread remaining batter in pan
9) Starting 1/4" from the edge, arrange about 3/4 of the apples in a circle, slightly overlapping
10) Form a 2nd circle in the center with remaining apples
11) Melt 1/4 cup of jelly and pour gently over apples
12) Drop teaspoonfuls of reserved batter - using about 2/3 of the batter - around outside edge of pan and spread to make 1/2" border
13) Fill center with remaining batter
14) Sprinkle slivered almonds over batter in center and around the edges
15) Bake 1 hour until golden brown
16) Cool 15 minutes, then remove pan sides
17) Melt remaining jelly and pour gently over apples
18) Cool
19) Sprinkle center and sides with confectioner's sugar
