Ingredients
- 2 cups yellow split peas
- 7 c water
- 1 medium yellow carrot or parsnip, cut into 1/2-inch dice
- 2 tablespoons fresh peeled and minced ginger
- 1 1/2 Tbs unsalted butter
- 1 small onion, chopped
- 2-3 Tbs Lemongrass Turmeric Curry Paste
- 10 yellow cherry tomatoes, quartered
- 14 oz coconut milk
- 1 Tbs salt
- Rice or Quinoa as side dish
Steps
Start making rice or quinoa
Rinse split peas. Boil. Add carrot and 1/2 tsp ginger. Simmer for 30 min.
Saute onion in ghee on low until translucent. Add curry paste for 1-2 min. Add ginger, tomatoes. Saute a few min to break down tomatoes a bit.
Add coconut milk, salt. Simmer uncovered for 5-10 min to thicken.
Server over rice/quinoa
