Ingredients

  • 2 cups yellow split peas
  • 7 c water
  • 1 medium yellow carrot or parsnip, cut into 1/2-inch dice
  • 2 tablespoons fresh peeled and minced ginger
  • 1 1/2 Tbs unsalted butter
  • 1 small onion, chopped
  • 2-3 Tbs Lemongrass Turmeric Curry Paste
  • 10 yellow cherry tomatoes, quartered
  • 14 oz coconut milk
  • 1 Tbs salt
  • Rice or Quinoa as side dish

Steps

Start making rice or quinoa Rinse split peas. Boil. Add carrot and 1/2 tsp ginger. Simmer for 30 min. Saute onion in ghee on low until translucent. Add curry paste for 1-2 min. Add ginger, tomatoes. Saute a few min to break down tomatoes a bit. Add coconut milk, salt. Simmer uncovered for 5-10 min to thicken. Server over rice/quinoa
