Ingredients

  • 1 cup italian salad dressing
  • 4 portobello mushrooms, stems removed
  • 1/2 bunch of fresh asparagus
  • 1/4 cup pie nuts
  • 8 oz got cheese with herbscrumble
  • 1/4 cup of julienne cut sun-dried tomatoes
  • 1/2 tspn salt
  • 1/4 tspn ground black pepper
  • 5 oz mix salad greens

Steps

1) Seal in a zip lock bag the mushrooms and the dressing. Let stand for 15 min and then grill the mushrooms 2) Place asparagus in a pan, a 2 tblspn of dressing, and when cooked stir in tomatoes and goat cheese 3) Toast pine nuts 4) Stuff mushrooms with the pine nuts and asparagus mixture
