Ingredients

  • 3 Tbs oil
  • 3 cloves garlic, minced
  • 2 red chilies, minced
  • 2 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp ground fenugreek seeds
  • pinch of cinnamon
  • pinch of nutmeg
  • 2 onions, chopped
  • 3.5 lb potatoes, peeled and cut to 2 cm cubes
  • 4 oz dry roasted peanuts, chopped
  • 1 lb very ripe tomatoes, chopped
  • 1 tsp brown sugar
  • 2 tsp lime zest
  • 2 Tbs lime juice
  • Salt and Pepper
  • Cilantro leaves, to garnish
  • Chopped peanuts, to garnish
  • Rice, to accompany

Steps

1) Stir fry oil, garlic, chili, and spices over low heat for 3 min until fragrant. Add onion and saute 3 minutes. 2) Add potato, tossing to coat. Add 1/2 cup water. Cover and cook on low for 10 minutes. 3) Add peanuts and tomato. Simmer, uncovered 70 min, stirring occasionally. 4) Season with sugar, zest, lime juice, salt, pepper. 5) Garnish with cilantro. Serve with rice.
