Ingredients
- 2 Tbs oil
- 1 onion, sliced
- 15 oz coconut cream
- 8 oz carrots, julienned
- 8 oz green beans, cut into 7 cm lengths
- 10 oz Chinese cabbage, roughly shredded
- 4 oz fresh Shiitake mushrooms
- 1/4 tsp sugar
- salt
- Curry Paste:
- 5 macadamia nuts
- 75 g shallots
- 2 cloves garlic
- 2 tsp chili paste
- 1/4 tsp ground trmeric
- 1 tsp ginger, grated
- 1 Tbs peanut butter
Steps
1) Make curry paste: Process all ingredients in food processor until smooth
2) Heat oil in large saucepan. Add curry paste and cook/stir over low heat for 5 min until fragrant. Add onion and saute 5 min. Add 1/4 cup coconut cream and cook/stir 2 minutes. Add carrots, beans. Cook on high for 3 min. Add cabbage, mushrooms, and 1 cup water. Cook on high for 8-10 minutes until vegetables are nearly cooked.
3) Stir in remaining coconut cream, sugar, and salt to taste. Simmer & stir for 8-10 minutes.
