Ingredients

  • 1 Tbs oil
  • 1 onion, finely chopped
  • 18 oz coconut milk
  • Salt
  • 8 oz fried tofu puffs, halved on the diagonal
  • Cilantro, to garnish
  • Rice, as a side
  • Curry Paste:
    • 10 small red chilies
    • 2 oz shallots, peeled
    • 1 Tbs fresh cilantro leaves & stems, chopped
    • 1 stem lemon grass, white part only, chopped
    • 2 Tbs grated cinger
    • 2 cloves garlic
    • 1 Tbs ground coriander
    • 1 tsp ground cumin
    • 1 tsp whole black peppercorn
    • 1/2 tsp ground turmeric
    • 1 Tbs lime juice

Steps

Make rice 1) Make curry paste: Process all ingredients in food processor until smooth 2) Saute onion in oil over medium heat 4-5 minutes until it starts to brown. At 3 Tbs of curry paste and cook, stirring for 2 minutes 3) Add coconut milk and 1/2 cup water. Season with salt. Bring slowly to boil, stirring constantly. Add tofu, then simmer for 5 minutes to thicken. 4) Serve, garnished with fresh cilantro.

    Used 2 Tbs premade curry. It was too mild in both flavor snd spice
